Ann's Birthday Cake

We made this cake for our favorite diamond girl and didn't know what to name it. So we decided to simply call it 'Ann's birthday Cake'. We're gonna get to the recipe in a minute, but first allow us to introduce you to this GEM of a human! You've probably seen her in our IG stories before, she's one of our best friends, a free spirit, a kind soul, married to a rockstar and she's also the most fabulous jewellery designer and founder of her own line Ann Perica. So one more time: HAPPY BIRTHDAY ANN! Here's what you'll need to make Ann's birthday cake:

- 100g butter

- 200g white chocolate

- 120g sugar

- 120g flour

- 2 eggs

- pinch of salt

- 1/2 tsp tonkabeans (optional but recommended)

- 120g pistachios, crushed

1 – Preheat oven to 200°C.

2 – In a sauce pan, melt the sugar and the chocolate.

3 – Add the sugar, eggs and salt, tonkabeans, and mix well.

4 – Add in the flour and the crushed pistachios (keep 1 tsp of pistachios for garnish).

5 – Spoon the batter into a spring from and bake for about 15-20 minutes. The cake should still be moist in the middle.

6 – Sprinkle with powdered sugar and some more pistachios.
