Asian Inspired Salmon Salad

Here’s something to brighten up your day - A healthy salad that’s not like a boring salad! Because the past few days, our eating? Let’s just say there might have been a few burgers, treats from babu’s, chocolate cakes from kaanloove and some brownies involved. (For you who follow our Instagram stories, you know what we’re talking about!) So today is a new day where we eat healthy things like salmon salad. Awesome. If you overdid it just a liiiittle bit like we did, you should make this. You’ll feel amazing, satisfied and your skinny jeans will thank you. WHAT YOU'LL NEED – FOR ONE PERSON - 200g salmon filet - lemongrass - 1 tbsp ginger - 1 lime - 2 tsp salt – handful of baby spinach – toasted sesame seeds Dressing: – 2 tbsp sesame oil – 1 tbsp brown rice vinegar – 1 tbsp honey – 1 tsp soy sauce – a dash of fleur de sel 1 – Fill a deep frying pan with water and add the lemongrass, ginger, lime juice and salt. Bring to a boil and then let simmer for a bit. 2 – Turn off the heat and add the salmon. Leave it in there for about 10 minutes. 3 – In the meantime, whisk together the dressing and wash the spinach. 4 – Once the salmon is cooked, pull it apart with a fork. Place the spinach and salmon in a bowl and drizzle with the dressing. 5 – Sprinkle with toasted sesame seeds, drizzle with honey and enjoy.
