Fregola Sarda Salad

Summer is not over yet, friends. We're still having friends over for fun BBQs and Rosé all day! If you're tired of the same old BBQ side dishes, make sure to check out our summer salads and here's one more delicious recipe for ya: the Fregola Sarda Salad! YUM! We first got introduced to this cute little pasta by our dear friend Ennio. It comes from his hometown in Sardegna and we. cannot. stop. eating it. This is a very simple version. But feel free to add whatever veggies you want and uh, top it off with some Burrata cheese. Yuuuummmmyyyyy.
Happy Indian summer, ya'll! Xx, Sue & Sibylle WHAT YOU'LL NEED – 250g Fregola Sarda – 100g Yellow Cherry Tomatos
– 2 tbsp Olive Oil
– 1 tbsp Orange Juice + some zest
– 1 tsp Maple Syrup
– 2 twigs fresh Thyme
– 1 tsp roasted ground cumin
– salt & pepper
1 – Cook Fregola Sarda according to packaging.
2 – Sice Cherry Tomatos and mix with the al dente Fregola Sarda
3 – In a small bowl, whisk together the Olive Oil, Orange Juice + Zest, Thyme, salt, pepper & ground cumin. Pour over Fregola Sarda and mix well.
