HONEY ROASTED VEGGIES

If we’re being completely honest, sometimes our veggie game isn’t the strongest, especially during these freezing cold january winter days where all we can think about is comforting soul food. Buuuut since we can’t only live on mac’n’cheese, we’ve come up with a healthy yet comforting veggie dish that will keep you healthy AND satisfied. Try this recipe, friends! Honey glazed oven roasted veggies. Soft, yet crunchy, savoury yet sweet, just the perfect flavour bomb to make you shine from within. Enjoy this as a main dish or serve over a nice homemade parmiggiano risotto. Yum, yum! Xx Sue & Sibylle WHAT YOU'LL NEED – veggies (We used carrots and sweet potatos this time, but really you can use whatever floats your boat!) For the dressing: – 50g organic honey – 1 Tbsp olive oil – 1 Tbsp orange or lime juice – a dash of fleur de sel. – thyme twigs
1 – Preheat the oven to 200 degrees. 2 – Coat your veggies with the honey dressing and roast for about 45 minutes. Keep an eye on them and stir from time to time. 3 – Remove from oven and sprinkle with thyme twigs. #RealHousewifeTip We usually line a baking dish with parchment paper so we don’t have to clean up, as the honey dressing is quite sticky and things will get messy!
