After all these delicious chocolatey recipes, here’s a wonderful, colourful, superhealthy delicious vegan veggie superfood salad bowl. We’re bursting with energy just writing about this delicious goodness that is this pretty bowl of yumminess. The zucchini get all ribboned up into shreds and the cauliflower, fennel and sweet potato get roasted with sesame oil.
We love the good feelings we get from sitting down with this superfood salad bowl in front of us and thinking about how much nutritious power these veggies are giving us. We can literally feel the healthy glow inside and out.
For the dressing: – 2 Tbsp sesame oil – 1 Tbsp brown rice vinegar – 1 Tsp soy sauce – 1 Tbsp honey – A dash of fleur de sel. – Chillies (for those of you who like it spicy)
1 – Preheat the oven to 200 degrees.
2 – Cut the sweet potatos in pieces and place them on a baking tray. Slice the fennel cut the cauliflower into steaks. Place them next to the sweet potato halves and drizzle with sesame oil and sprinkle with fleur de sel.
3 – Roast for about 20 minuts, until golden brown.
4 – While your veggies are in the oven, prepare the dressing by simply whisking all the ingredients together.
5 – Wash your zucchini and spiralize. Put the zucchini spaghetti in a bowl. Once your veggies are roasted, add them to the bowl. Drizzle with the dressing and top with mulberries and chia seeds. Enjoy!
