We are jumping up and down of joy because we found the most comforting veggie dish everrrr. Seriously have you heard of swoodles? We knew of zoodles, but swoodles? It’s sweet potatos made into noodles people. And they taste amazing. A-m-a-z-i-n-g!!!
The best thing we bought in 2016 so far must be the spiralizer and we highly recommend you go get yourself one. Inexpensive and will make your life so much more fun. If you dont have a spiralizer just whip up some ribbon-y tagliatelle noodles using a vegetable peeler. We can’t wait to figure out more kinds of veggies to make into noodles. But for now, here’s the recipe for our newest addition to our recipe collection: Swoodles. (Just how fun is the word alone already?)
Try this recipe, friends! It will sweep you off your feet. Enjoy as a main course or serve with out cauliflower steaks as seen on our instagram feed. Yum, yum!
1 – Place your peeled and spiralized sweet potatos into a bowl.
2 – Combine the sesame oil and the soy sauce and poor over your swoodles. Let sit for about 30 minutes. Make sure the marinade is combined well.
3 – Heat some sesame oil in a frying pan and add in your swoodles. Over medium heat cook them for about 10 minutes stirring occasionally.
4 – Once your swoodles are cooked to your liking, sprinkle them with scallions and serve immediately. Drizzle with some lime juice and enjoyyyy!
#RealHousewifeTip For that extra crunch, top your swoodles with some homemade cashews. Simply mix cashew nuts with 1 tsp sesameoil, 1 tsp curry powder and a dash of salt. Place on a baking sheet and bake in your oven for about 10 minutes at 150°. Make sure to keep an eye on them and not to burn!
