When Betty Bossi asked us to guestblog for Kraut und Rüben we got uuuber excited and started brainstorming for an amazing recipe right away. Since breakfast is our favorite meal of the day (we know, hard to tell by our feed lol) it had to be a breakfast recipe. After one too many feasts during the holidays we were craving something healthy yet delicious. And inspired by a recent trip to Bali, we came up with a banana bread topped with caramelized bananas, ohhhh baby! Straight out of the ofen this delicious naturally sweet banana bread feels like a nice warm and gentle hug.
This recipe is so easy peasy and you probably already have all the ingredients you need at home anyways. One more bonus (as if you really need more reason to make this yummy brekkie): it is healthy and naturally sweet without refined sugar and flour and all the other nasties. Which really is a good thing considering all the christmas cookies you, ok fine us too, probably more us than you, let’s just say allll of us have been eating.
Anywayssss back tot he good stuff here: We love topping our banana bread with – wait for it – caramelized bananas. It’s like double trouble but oh so good kids, we promise. Caramelized bananas are our favorite thing in the world at the moment. They take like no time to make and our so naturally sweet you just want to lay yourself in them. Oh and add a dollop of salted caramel? Don’t mind if we do...YUMS.
Soooo let’s all head on over to our kitchens and bake this beauty and top it off with more little caramelized banana beauties and just be happy and cuddly and sit on the couch all day with a cosy blanky and a cup of tea and more bananabread?

WHAT YOU'LL NEED
For the banana bread: - 3 (very ripe) bananas - 2 eggs - 1 tsp coconutoil - 1 or 2 tbsp agave (depends on how sweet you like it) - 200g oats - 1 tsp baking powder - 1 tsp cinnamon - pinch of salt
1 – Mash up the bananas and mix them well with the eggs, coconut oil and the agave. Add in the remaining ingredients and mix well.
2 – Pour the batter into your lined baking pan and bake for 30-40 minutes at 180°C.
For the caramelized bananas: - 1 tbsp coconutoil - 2 bananas - 1 tbsp brown sugar
1 – Over medium heat melt the coconut oil in a frying pan. Meanwhile slice your bananas and sprinkle them with sugar.
2 – Add the bananas to the pan and caramelize them for about 2 to 3 minutes per side. Remove from pan carefully and serve hot on your ofen warm banana bread.
